About nutmeg

Nutmeg is the seed of the nutmeg tree, which is native to the Moluccas in Indonesia. When the fruit is ripe it splits open, showing the red aril (mace) around a single brown seed. After harvest the mace is removed, and the seeds are sun-dried for six to eight weeks until the kernel rattles inside the shell. The shells are then cracked and the kernels sorted.

Besides cooking and baking, nutmeg is processed into essential oil, nutmeg butter and fragrance ingredients.
